L. monocytogenes is a high risk of pathogen public health , which can be found in food, by direct or indirect contamination. May lead individuals to acute meningitis , septicemia and abortion , and the risk group of chronic diseases , pregnant women and the elderly. And ensure the overall quality of food to consumers is a challenge and an impossibility at the same time . A challenge by trying to seek ethical criteria and set standards that meet adequate hygienic- sanitary standards that food production.
